I hope this works, because it's dinner for tonight and tomorrow. I suppose if all else fails, I can slather it with dijon.
Meatloaf
Ingredients
- olive oil
- 2 cups (200g) caulirice
- 1 cup (101g) celery, diced
- 2 cloves garlic, minced (or 1 tsp minced garlic from jar)
- 1 egg white
- 1 tsp parsley
- 1 tsp thyme
- 2 tsp chives
- 2 tsp sea salt
- 1 tsp ground black pepper
- 1 lb ground meat (elk, bison, extra-lean beef, turkey--though red meat is preferred)
Directions
- Preheat oven to 350°F.
- In medium saute pan, warm olive oil over medium heat. Saute caulirice, celery and garlic for 5-7 minutes. Set aside to cool slightly.
- In medium mixing bowl, lightly beat egg white. Add parsley, thyme, chives, salt, pepper, and turkey. Add caulirice mixture. With clean hands, toss ingredients until combined.
- Line two 5.75"x3" loaf pans with parchment paper. Divide meat mixture in half by weight and press half into each loaf pan.
- Bake 40 minutes or until done. Let rest 5 minutes before serving.
Verdict: Much better with red meat than with turkey.
